The bakery is run by the Magnussen/Kvarme family, with mother Mariann as the talented baker and main driving force behind the operation. Father Ivar, a skilled builder, constructed the bakery and its oven, which weighs nearly 30 tons and produces the most delicious crust you can imagine. At Bakstehuset, all the baked goods are crafted in-house using the finest and purest organic ingredients, preferably sourced locally. The bread is carefully fermented, allowing it to develop a rich and flavorful taste while preserving important nutrients and ensuring excellent shelf life. This commitment to quality extends to the selection of ingredients, as the bakery only uses stone-ground flour from small Norwegian mills that share a passion for their products and refrain from adding any artificial additives or enhancers. Bakstehuset is dedicated to preserving old baking traditions, using techniques passed down through generations. For example, coarse flour is scalded the day before baking to prevent it from drawing moisture out of the bread, ensuring its freshness for longer. Some of their bread takes over a day to be ready, as they use ancient grain varieties like emmer, ølandshvete, svedjerug, and spelt. Patience is a key ingredient in their process, which is evident in the delicious taste of their products. In addition to their exceptional bread, Bakstehuset offers a cozy space where visitors can indulge in a cup of locally roasted coffee served in beautiful ceramic mugs crafted by Linda Lid.
