Their latest release, the Wild Pure Tasmanian Pot Still Rum, is a collection of single cask rum expressions. The rum is fermented, distilled, and matured at their Somerset distillery, just meters from the Bass Strait. The rum is produced from organic panella sugar, brewed with pure Tasmania water, and double distilled in their 100% copper pot still.

The result is a light, floral, and ester-rich spirit with notes reminiscent of rhum agricol, showcasing a distinctly Tasmanian character influenced by the ocean at their doorstep. This release of Tasmanian pot still rum has been traditionally aged for just over 2. 5 years in a 37L American oak cask, previously holding wheated bourbon.
