Our journey began in mid-2020 as a pop-up shop in Simpsonville, SC, when owner Erika Dila recognized the need and opportunity to bring true Cali-Mex cuisine to the Upstate. With a passion for home cooking and the support of her experienced family members, who collectively have over 40 years of expertise in the Food and Beverage industry, Erika introduced the famous Birria Tacos to Greenville, SC.

But what sets Califas apart? At the core of our establishment is Erika's unwavering passion for learning and perfecting dishes from various cultures. Her culinary journey was shaped by executive chefs in her family, who have cooked for renowned personalities like Christian Slater, Sylvester Stallone, Arnold Schwarzenegger, Sharon Stone, and even Bill Clinton. Erika's years in the corporate world provided her with invaluable experience and prepared her for the task of opening her own restaurant.

Growing up in Culver City and living in West Los Angeles, Erika gained a unique perspective and appreciation for Latin Cuisine. Guided by her grandmother and mother, she learned that cooking is an art infused with love, passion, and a commitment to constantly surpassing one's own culinary achievements. For Erika, Califas represents the fulfillment of a dream not only for herself but also for her family.
