## Description

Yoi began in 2017, not as a plan, but as a fix. A local franchise Jaime Lacayo ran had become unsustainable — great sales, absurd supplier costs — so he shut it down, keeping only his best four employees and an empty kitchen. One night at dinner, a friend joked: "Why not sell Korean fried chicken?" It stuck. The next day he researched recipes online, cooked a batch by evening, and tested it on a room full of unimpressed teenagers — who ate every last piece. Yoi opened December 6, 2017: 100% built in Panama.
