## Description

The Lemgo D- and z-value Database for Food (LDz-base) is an innovative resource developed by the Institute for Life Science Technologies (ILT.NRW) at the OWL University of Applied Sciences and Arts. Launched in 2006 by Thomas Althoff as part of his diploma thesis, the database has evolved to include contributions from numerous experts in food safety and technology. It compiles critical data on D- and z-values, which are essential for understanding microbial behavior and ensuring effective food sterilization processes.

The LDz-base features collaborative research insights from various laboratories, including the Laboratory of Process Engineering, renowned for its work on sterilization; the Laboratory of Beverage Technology, which focuses on microorganisms affecting beverages; and the Laboratory of Microbiology, which supports the database with expertise in microbial kinetics and thermal sterilization. This unique collaboration ensures that users have access to up-to-date and reliable data, promoting food safety and quality within the industry. The project is supported by the OWL University, highlighting its commitment to advancing scientific research in food technology.
