## Description

Koji no Nakamatachi is a Japanese fermentation-focused brand built around the idea of making koji approachable and inviting people to enjoy the world of fermentation. Operated by Naoki Hasegawa, a fermentation master and amazake culture researcher, the initiative grew from his personal experience making fermented foods and exploring their place in everyday life.

The brand offers fermentation classes, workshops, and event appearances, helping participants learn practical skills and discover traditional foods. Its online content includes step-by-step guides, recipes, and articles on koji, amazake, miso, soy sauce, fermented vegetables, and fermentation microbes. Topics range from making koji and managing fermentation temperatures to preparing regional specialties such as grilled manju. Koji no Nakamatachi also provides a learning community for people who want to deepen their understanding of fermentation, including an online koji and fermentation course. Its products include concentrated brown rice amazake, promoted for its natural sweetness. Through education, recipes, and food, the brand encourages people to bring fermentation into daily life and appreciate the traditions behind it.
