## Description

Restaurant Le SIN is a gastronomic restaurant located within the Cité de l’Océan in Biarritz, France. Run by Marie and Michel Cassou-Debat and their team, it welcomes guests to dine indoors or on its terrace, with views of the ocean and Château d’Ilbarritz. Set in a striking, wave-shaped cultural complex designed by architect Steven Holl, the restaurant pairs its distinctive setting with a focus on flavour and seasonal, locally sourced ingredients.

Chef Michel Cassou-Debat, a Béarnais native, has worked in renowned establishments including Crillon, Grand Véfour, Le Petit Nice and Troisgros. His carefully prepared menu changes every two months to reflect the seasons; a signature dish is farm-raised pigeon with garlic jus. The SIN also operates a café serving fresh snack foods for visitors to the Cité de l’Océan. For private occasions, guests can arrange exclusive use of the restaurant, café space or both, for events such as cocktail receptions, birthdays, product launches and general meetings. Reservations are available by phone or email.
