## Description

Maido is a restaurant in Miraflores, Lima, Peru, dedicated to contemporary Nikkei cuisine, a culinary tradition shaped by the meeting of Peruvian and Japanese histories. Its philosophy treats cooking as an evolving conversation, bringing inherited flavors and new ideas together in dishes designed to surprise through changing textures, acidity, umami and spice. The restaurant offers the Maido Experience, a 12-course tasting menu, with options including no beverage pairing, pairings featuring New World or Old World wines and sake, and an alcohol-free pairing made with native Peruvian fruits and teas. Experiences are available Monday through Saturday, subject to availability. Maido also welcomes private groups at Maido Hub, an immersive, open-kitchen space near the restaurant and described as chef Mitsuharu “Micha” Tsumura’s research workshop. Designed for groups of 12 to 36, it offers a close-up view of the team’s creative process for celebrations and events. Reservations, inquiries and group bookings can be made through Maido’s website and contact channels.
