VINOS MIO focuses on quality, with low yields ranging from 1 to 2 bottles per plant. This allows for maximum concentration of aromas, color, and soft tannins, resulting in expressive varietal wines. Their winemaking process prioritizes naturalness, starting with manual harvest and careful selection of grapes. Fermentation is temperature-controlled, and selected yeasts ensure complete fermentation. Varietal wines undergo cold stabilization, while reserva and gran reserva are naturally stabilized through barrel aging. All of VINOS MIO's wines are bottle-aged to ensure they are ready to be enjoyed upon release. Varietal wines are aged for 6 months, reserva for 12 months, and gran reserva for 14 to 18 months.
