## Description

Sassafras is a cottage restaurant in Betterton, Maryland, overlooking the Chesapeake Bay and Sassafras River. Founded by chef Paul Edward and proprietor Caroline Benkert, it offers an intimate dining experience shaped by the Chesapeake watershed, its history, and the people who have lived along its shores. At the eight-seat Chef’s Counter, guests are served by Chef Paul and the Sassafras team and enjoy a twelve-course tasting menu featuring modern, hyper-seasonal Chesapeake cookery. The menu follows the tides, forests, and farms of the region, with seafood sourced wild from Mid-Atlantic and Chesapeake waters, except for caviar from wild Mississippi River sturgeon. Seasonal ingredients include produce and meats from local gardens and farms, alongside items prepared in the restaurant’s smokehouse. Sassafras hosts reservation-only meals, with dinner service from Wednesday through Saturday beginning at 6:45 p.m.; the experience lasts approximately three hours. Lunch is also offered at scheduled times. Guests can join the mailing list for seasonal updates, notes from Paul, and advance notice of reservation releases.
