## Description

Skærestuen is a game-processing workshop in Holstebro, Denmark, serving hunters who want their harvested game prepared and returned to them. Run by Charlotte, a trained retail butcher specializing in slaughter, and her husband Lars, the business draws on their combined experience of more than 60 years processing game. Both are active hunters.

The workshop accepts red deer, roe deer, fallow deer and sika deer. Services include butchering, cutting to agreed preferences, vacuum-packing and labeling individual cuts. Minced meat is generally packed in 500-gram bags, and customers can arrange larger packs. Sausage-making services are referred to an external provider. Skærestuen does not buy or sell game or meat, and does not accept wild boar, regulated game, birds or skinned animals.

Each animal receives a unique identification number, which remains with the meat throughout processing to ensure customers receive their own game. Animals must be field-dressed and delivered by appointment; collection is also arranged in advance. Skærestuen is located on Hvamvej in Holstebro and has no fixed opening hours.
