## Description

Thallus Foods is a food company focused on cultivating Chicken of the Woods mushrooms indoors at scale for the first time. Once a foraged delicacy, this mushroom is now grown year-round in controlled indoor conditions, making it more accessible while preserving its distinctive, naturally meaty qualities. Thallus describes its product as dense, protein-rich, and versatile, offering a substantial bite for a range of dishes. The company highlights comparisons with familiar mushrooms, stating that its Chicken of the Woods has five times more protein, four times more fiber, and a texture four times denser. Its “Let’s Get Cooking” invitation emphasizes the mushroom’s potential for use in cooking, while endorsements from chefs—including a Food Network finalist, a chef who participated in the 2023 White House State Dinner, and UC Davis’s executive chef—lend culinary context. Thallus Foods also invites visitors to sign up for updates and provides an email contact for inquiries. With an emphasis on indoor cultivation and practical versatility, the brand presents Chicken of the Woods as a distinctive ingredient for chefs and home cooks.
