## Description

The Easy Vegan is a Denver-based, veg-forward food brand founded by Alexi Mandolini and Taylor Herbert, whose combined experience spans 28 years in the service industry. Started as a twice-weekly restaurant pop-up after the pandemic disrupted their work, the business now serves food across Denver, from relaxed street-food offerings to thoughtful farm-to-table meals. Its approach is welcoming and inclusive, with seasonal menus designed to appeal to vegans, omnivores, and everyone in between.

The Easy Vegan offers catered experiences for events of all sizes, including cocktail hours, buffets, family-style meals, and plated dinners. Its catering program features locally sourced, seasonal options and a team of hospitality professionals. The brand also appears at Denver farmers’ markets and hosts pop-ups and plated dinners. Its website announces a restaurant, Mother Other, scheduled to open on June 27, 2026. The Easy Vegan has also appeared on Season 16 of The Great Food Truck Race. Catering bookings are currently closed while the team focuses on the restaurant opening, with plans to reopen its books for 2027.
