Anima by EDO is an off-Strip restaurant at The Gramercy in Las Vegas, bringing Spanish, Catalan, Mediterranean, and Italian traditions together through a chef-driven approach. Led by Chef Tayden Ellamar, the restaurant serves dinner nightly and emphasizes thoughtful technique, handmade food, and relaxed hospitality. Guests can choose à la carte dishes or a multi-course tasting menu, with wine pairings available and vegetarian or vegan tasting menus offered upon request.

The menu includes Catalan tapas and small plates, handmade pasta, seafood, and meat dishes. Examples include corn and miso croquetas, Atlantic octopus, mushroom-almond ragù rigatoni, snow crab linguine, whole dorade, and braised short rib. The bar offers craft cocktails and a frequently changing wine selection. Monday Pasta & Wine Night features two handmade pasta dishes and a selected bottle of wine.

Anima by EDO also provides private dining, group events, catering, and full restaurant buyouts, with spaces including a main dining room, chef’s counter, and private wine room. Digital gift cards are available, and reservations can be made online.
