In 1957 werd bakkerij Koese opgericht door opa Izaak Koese. De winkel en de bakkerij werden gevestigd op de nog steeds vertrouwde plek aan de Binnenweg 13 te Sommelsdijk. Jarenlang zaten Izaak en zijn vrouw Wouterina samen in het bakkersvak, toen hun oudste zoon, Gert Koese, op 15 jarige leeftijd ook besloot om te gaan
