Baldaiassa is a Piedmontese food producer based in Cortazzone, in the province of Asti, an area known for hazelnut cultivation. Since 2009, the company has produced and sold hazelnuts, hazelnut oil, and traditional regional specialities in Italy and abroad, primarily through its own online shop. In its in-house laboratory, Baldaiassa roasts and processes Piedmontese Tonda Gentile Trilobata hazelnuts into flour, pure hazelnut paste, and cold-pressed oil.
Its sweet products include hazelnut cake, biscuits, pastries, gianduiotti, Cri Cri chocolates, Baci di Dama, pralines, spreads, and other baked treats. The range also extends beyond hazelnuts to fruit jams and jellies, jarred desserts such as bonet and panna cotta, and savoury Piedmontese foods. These include Bagna Cauda made with different oils, antipasto, giardiniera, and red and green bagnet sauces, all ready to serve.
