Brasserie Uno is an independently owned, Michelin-starred restaurant in Zermatt Village, offering rustic fine dining with a creative, international perspective. Named after the ownerβs grandfather, the restaurant combines a warm, personal setting with a collaborative kitchen led by head chef Luis Romo and chef Tommaso Guardascione. Their surprise small-plate tasting menus change with the seasons and the availability of ingredients, bringing together inventive global flavours and high-quality Swiss produce.
Guests can choose a six-course menu or a four-course option, with optional wine pairings and alcohol-free alternatives available on request. Vegetarian dishes are offered, alongside Swiss meat and fish; the restaurant cannot provide vegan menus or Γ la carte dining. Brasserie Uno prioritizes regional and seasonal sourcing, using garden-grown or foraged ingredients when available and organic products where possible. It also works to minimize food waste, with remaining waste recycled into energy that powers the village. Open Tuesday through Saturday for dinner, the small restaurant welcomes reservations for parties of up to six.
