Our journey began while running our shop, Mr. Duffy's Traditional Sweetshop in Tralee, where we noticed a lack of Irish chocolatiers offering a diverse range of bars. Determined to fill this gap, we embarked on extensive research and training, discovering that chocolate is an incredibly complex compound with over 1500 identified flavor components.
