California Caviar Company is a Sausalito-based producer and distributor of sustainably farmed premium caviar. Founded in 2007 by Deborah Keane, known as the “Caviar Queen,” the company connects traditional caviar expertise with sustainable aquaculture, culinary innovation, and customer education. Its vertically integrated operation is designed to let customers trace caviar from tank to tin.
The collection includes premium caviar, roe and infusions, gift sets, chef’s signature products, and private-label offerings. The company also sells accompaniments, gift cards, and accessories, and shares recipes and practical guidance on pairing, serving, and storing caviar. Its products are sought by chefs, including Michelin-starred chefs, as well as experienced connoisseurs and people discovering caviar for the first time.
California Caviar Company operates the Bump Bar in Sausalito, an intimate caviar bar featuring chef-curated menus and a Champagne-focused wine list. The brand also takes part in culinary and charitable events, introducing guests to its products and caviar culture. Sustainability, innovation, and education are central to its mission.
