About COFU
COFU is a plant-based Japanese restaurant in Vancouver’s Chinatown, dedicated to honoring culinary tradition while exploring its possibilities through vegetables. Founded and led by Japanese entrepreneur and chef Akiko Gulkison, the restaurant combines careful technique, seasonal ingredients, and a serene, traditionally inspired setting. Its cuisine draws on Shojin Ryori, an Oriental vegan tradition, and reimagines Japanese dishes using entirely plant-based ingredients.
Guests can choose a chef-led omakase tasting, with courses served in sequence to showcase flavor, texture, temperature, and aroma. COFU’s featured Autumn Omakase includes 18 courses for $160 per person. A more relaxed dining experience offers seasonal dishes designed for sharing, with the same attention to craftsmanship and Japanese culinary traditions.
