Darn Good Veggies is a brand that is all about celebrating and enjoying the goodness of vegetables. Founded by Laurel, a passionate veggie lover, recipe developer, and photographer, Darn Good Veggies offers a variety of crave-worthy, veggie-packed recipes that are loved by both skeptics and connoisseurs of vegetables. Laurel's journey with vegetables hasn't always been smooth.

In fact, she used to cringe at the thought of asparagus and relied on butter to mask the taste of green beans. However, over the years, she learned how to whip up delicious and flavorful veggie dishes that would change anyone's perception of vegetables. Apart from her love for veggies, Laurel enjoys taking long walks with her husband and boys, and she has a soft spot for chocolate and cilantro.

She firmly believes that food is the best medicine and is proud to be a part of her husband's superfood lemonade company, Vimco Wellness. Laurel's passion for cooking started at a young age, and it became even more important to her when she was diagnosed with Crohn's Disease and became intolerant to gluten. She turned to a plant-based diet and found that it was more effective in putting her disease into remission than medication.

Although the initial months were challenging, she persevered and eventually found her groove, creating delicious gluten-free and plant-based recipes that have become her signature. With Darn Good Veggies, Laurel aims to inspire others to embrace the power of vegetables and discover the joy of cooking and eating them. Whether you're a vegetable lover or skeptic, you're sure to find something delicious and nutritious to enjoy from Darn Good Veggies
