EMi is a restaurant in Madrid founded in 2025 by chef Rubén, who returned home after more than a decade working in kitchens around the world. His experience at acclaimed restaurants including Noma, Geranium, Azurmendi and Atomix informs a personal approach that brings together New Nordic principles, Japanese and Korean techniques, seasonality, respect for the environment and clear flavours.

The restaurant offers a single tasting menu of around 14 courses, featuring snacks, hot and cold dishes, dessert and petit fours. Guests can choose from three wine-pairing options, supported by a carefully curated cellar that includes distinctive bottles, unexpected finds and wines by the glass. Sommelier Miguel Ángel Millán leads the wine experience, bringing expertise recognised with the 2023 World’s Best Sommelier Award.

EMi’s open kitchen and relaxed, attentive service are central to the experience. The space includes a 12-seat counter, a private dining room for four to eight guests, and a visible wine cellar. The restaurant also hosts private events with tailored pairings.
