Schmit’s culinary background combines French training with extensive restaurant experience. Born in Roanne, France, he began apprenticing at 14 and later trained at three Paris restaurants awarded two Michelin stars. He received the distinction “Master Chef of France” for his dedication to French cuisine. In Houston, he created Philippe Restaurant + Lounge, recognized by Texas Monthly as one of Texas’ best new restaurants, and led the kitchen at Bistro moderne at Hotel Derek. He has also worked with the Lombardi Group and consults for restaurants across the United States.
