About Groupe Éclore
Groupe Éclore is a Parisian restaurant group founded in 2018 by Stéphane Manigold. Bringing together eight distinctive restaurants, it gives chefs the freedom to develop their own culinary identities while sharing a commitment to quality ingredients, thoughtful hospitality, and food made in-house. Its portfolio ranges from fine dining to neighborhood bistros, with four restaurants recognized by the MICHELIN Guide: two-starred Maison Rostang and one-starred Substance, Granite, and Contraste.
The other addresses—Braise, Paris Bonheur, Bistrot Flaubert, and Liquide—offer varied dining experiences, including wood-fire cooking, modern bistro fare, and a contemporary tavern. Across its restaurants, Groupe Éclore champions seasonal produce, artisans and producers, responsible sourcing, and accessible gastronomy.
