About HAMASAKU
Hamasaku is a Kyoto restaurant recognized as the originator of itamae kappō, a style of Japanese dining in which chefs prepare and serve dishes across the counter. Founded in Gion in 1927 by Moriya Sakae, the family-run establishment has continued for generations, guided by a commitment to exceptional ingredients, seasonal flavors, and attentive hospitality. Its chefs select the finest ingredients available each day and prepare them simply, allowing their natural qualities to shine.
Guests may order directly from the counter or choose a seasonal omakase menu, with preparations adapted to individual diners. The restaurant also offers a long-running cooking school, where participants can learn its classic recipes, and publishes books featuring signature dishes and essays about Kyoto. Its online shop offers selected products, with orders sometimes requiring advance reservation.
Hamasaku has announced that it plans to conclude regular restaurant service following a final year of operations marking its centennial, making reservations particularly important for those wishing to experience its cooking
