ICUMSA, the International Commission for Uniform Methods of Sugar Analysis, is an international organisation focused exclusively on analytical methods for the sugar industry. Through its officers, executive committees and national committees, it brings together expertise from countries around the world to develop and maintain methods used to analyse sugar and related materials. Its work spans raw, white and speciality sugars, molasses, sugarcane, sugar beet and processing, as well as topics such as sampling, physical and chemical analysis, microbiology, colour and measurement practices.

ICUMSA provides access to its methods through the ICUMSA Methods Book and periodic supplements, alongside specifications, standards, recommendations and proceedings from its international sessions. The methods address measurements including sucrose content, colour, moisture, ash, sugars, metals and microbiological properties, using techniques such as chromatography, polarimetry, spectrophotometry and titration.
