Katerra Exotics is a family-owned business that specializes in producing pasture-raised bison and other grass-fed meats. The company's name is inspired by the city where they reside, Katy, and the Latin word for land, "terra. " Although bison is native to America, it is still considered an exotic meat.
The Bierschwale family, actively involved in the buffalo industry since 1980, operates two ranches, with the main production herd located in the Frio Canyon just outside of Leakey, TX, and a second ranch in Katy. The bison graze freely on Texas Hill Country grasses, ensuring their well-being and the production of high-quality meat. The animals are never given growth hormones or antibiotics, and the pastures are free from fertilizers and pesticides.
Customers can buy the meat at local markets and have it shipped directly from the ranch. Visit their Ranch Store in historic Katy Prairie, or meet them in person at one of their local, Houston farmers' markets
