Mita Seimenjo is a Japanese restaurant brand dedicated to sharing the appeal and culture of tsukemen, or dipping noodles. Its signature is a rich tonkotsu-fish broth made by combining animal, vegetable, and seafood stocks, served with thick noodles made from a proprietary blend of wheat that emphasizes aroma and a firm, chewy texture.

The menu includes classic tsukemen, seasonal limited-time noodle dishes, and sides such as in-store-prepared fried chicken, which received a Gold Award in the East Japan soy-sauce category of the 11th Karaage Grand Prix.
