Moussoune Productions is a small mushroom producer based near Le Mas-d’Azil in the Ariège Pyrenees Regional Natural Park. Founded by Nicolas Supéry, the business cultivates organic-certified shiitake and oyster mushrooms in production greenhouses, then transforms them on the farm or in a certified processing laboratory. Its Ecocert certification reflects the organic status of its mushrooms.

The brand offers fresh mushrooms through local distribution networks, alongside a range of preserved products available from its online shop. Dehydrated shiitake and oyster mushrooms are presented as concentrated in aroma and flavor, suitable for soups, sauces, Asian-inspired dishes, rice, pasta, and meals with meat or fish. Moussoune Productions also makes plant-based spreads using its mushrooms with ingredients such as legumes, dried fruit, and spices.
