Porte Neuf

Porte Neuf is a haute cuisine restaurant in Detmold, Germany, led by chef Daniel C. Fischer. Its culinary philosophy treats cooking like music: dishes are designed to create emotion through purity, craftsmanship, expressive flair and a careful sense of balance. Fischer’s professional experience includes kitchens and restaurants in Germany, Ireland, Austria and Italy, including Michelin-starred establishments such as Schwarzer Adler and Colombi Hotel, as well as Restaurant Konstantin Filippou, which held two Michelin stars.

The restaurant offers several tasting-menu experiences. MATIÈRE presents a sequence of seasonal creations, while MATIÈRE – ESSENCE offers a shorter selection. The menus bring together ingredients and influences such as beef, pear, trumpet mushrooms, caviar, Jerusalem artichoke, scallop, peas, maitake, veal, miso, sesame, chocolate and mandarin. Guests can complement the menus with wine journeys or non-alcoholic pairings. Porte Neuf also offers the P9 Signature Menu, available exclusively by advance order. Located on Woldemarstraße, the restaurant welcomes guests Tuesday through Saturday in the evening, with reservations available by phone or email.
