Ginko is a family-founded vegan restaurant brand in Graz, Austria, established in 1976 by the Gilma family. Its Ginko Greenhouse location, open since 2015, serves plant-based food and drinks with an emphasis on fresh preparation, quality, and biological, regional, and seasonal ingredients. At the heart of the restaurant is a buffet where guests can choose from salads and warm dishes, with food priced by weight.

The selection includes daily-changing soups, main courses, side dishes, dressings, sauces, and chutneys, alongside fresh juices, smoothies, coffee, and tea. Takeaway is available, and dishes are clearly labelled. Ginko also has an in-house vegan bakery producing cakes and tortes without milk, eggs, honey, or gelatine.

Its bakers use organic spelt from Styria, milled daily, and some baked goods are gluten- and soy-free. Guests can order cakes and tortes, and use a Ginko Card to receive a discount on purchases. The Graz Greenhouse is located on Grazbachgasse and opens Monday to Saturday
