Ristorante Pietrabianca

Pietrabianca is a family-run restaurant in a historic, carefully renovated palace in the heart of Florence. Inspired by its owners’ roots in Trani, Puglia, and the city’s white-stone cathedral and sea, the restaurant brings southern Italian culinary traditions together with the flavors of Tuscany. Its intimate, elegant setting is designed to create an immersive dining experience that engages the senses.

The menu, created by chef Andrea Cancelli and his team, moves from sea to land, pairing traditional dishes with innovative reinterpretations. Seafood is a particular focus, alongside ingredients and prized meats associated with the region. The restaurant emphasizes the quality of its raw ingredients and presents its dishes with careful attention to detail. Guests can also explore a notable wine cellar and an extensive wine list, as well as desserts served with care. Pietrabianca offers dine-in service and a “buchetta” experience, with separate hours for the restaurant and the window service. Located near Florence’s historic center, it welcomes guests seeking refined cuisine in a warm, personal atmosphere.
