SEVI is a Peruvian restaurant in Florence that presents the country’s culinary traditions through the contemporary approach of chef Francys Salazar. Its cuisine combines technique, creativity and research, with charcoal cooking at the heart of the menu. Kamado and robatayaki methods bring out the character of the ingredients, shaping a distinctive dining experience rooted in Peruvian flavors. The restaurant offers menus in Italian, English and Chinese, as well as a lunch menu and a “Fragmentos” menu. Guests can also book a tasting experience or reserve a table.
The SEVI Cocktail Bar offers a more casual extension of the restaurant’s kitchen, featuring a selection of dishes designed to accompany its cocktails while reflecting the same culinary identity and philosophy. SEVI also provides gift cards. Its work has received recognition from Gambero Rosso, which awarded it Two Globes, and Forbes, which included it among Italy’s 100 innovative restaurants.
