SHOEI PARIS

SHOEI is a Japanese restaurant in Paris that brings together Japanese culinary traditions and the ingredients, seasons, and culture of France. Its approach is not to recreate Japan abroad, but to use techniques such as sushi preparation, kappo-style multi-course dining, and charcoal cooking to highlight the authentic flavors of seasonal French produce. The restaurant’s culinary heritage is rooted in a family sushi business in Nagoya, carried forward by chef Hiroshi Fujii.

Born in 1982, Fujii trained for ten years at a traditional restaurant in Kyoto, worked as a sushi chef in Tokyo, and moved to France in 2013. His experience includes apprenticeships at Aïda, Enyaa, and Hakuba at Cheval Blanc, as well as learning wood-fire cooking at Asador Etxebarri in Spain’s Basque Country. At SHOEI, he combines the skills and spirit inherited from Japan with what he has learned in Paris to create a distinctive, seasonal Japanese dining experience.

The restaurant is located at 121 Rue Saint-Honoré and offers lunch and dinner, with approximately 30 seats, including eight at the counter
