The restaurant was originally founded in New York’s West Village in 2003 and is produced by DREAMS COME TRUE, with the aim of sharing the group’s music with audiences around the world through food that crosses culinary boundaries.
The restaurant serves handmade Italian cuisine guided by the idea of food that is both delicious and healthy. Its dishes feature pesticide-free vegetables from partner farms, fresh fish delivered directly from its place of origin, and carefully selected meat. Menus may also incorporate superfoods, fruit and vegetables gently dried to concentrate their nutrients, and house-made natural yeast. The dining room offers around 35 seats, including counter, table, and bar seating, in a distinctive setting furnished with antiques and chandeliers.
From October 3, 2026, sumile TOKYO will suspend dinner service as it prepares for a new challenge.
