Jerry Thomas Speakeasy is an Italian cocktail and hospitality project founded in Rome in 2010 by a group of bartenders seeking to revive forgotten methods of drink mixing. Created as a small club for industry colleagues, enthusiasts and curious visitors, it became Italy’s first “secret bar,” offering a setting for experimentation and shared knowledge. The team’s work has included travel, historical research, study, cultural exchange and seminars, and the venue has appeared six times in the World’s 50 Best Bars ranking.
In 2013, following extensive historical and technical research, the project introduced Vermouth del Professore, the first in a series of products developed in collaboration with Distillerie Quaglia. The Jerry Thomas Project continues to focus on research, cocktail experimentation and sharing its expertise. Its offerings include the original Speakeasy on Vicolo Cellini and the Bar Room on Via del Moro in Rome, alongside consultancy, an academy, a show and an online shop. The brand remains a reference point for Italian mixology, continuing to explore and share its knowledge.
