Our farm-to-pasta project is the embodiment of this vision, offering an array of hand-crafted Italian specialties that are made with the freshest and most sustainable ingredients.

At Trenchers, we are dedicated to creating the best pasta possible, starting with our commitment to using regenerative and sustainable agricultural practices. Our farm in Lyndonville is home to a flock of 500 chickens, and our two rotating gardens and greenhouses yield Italian heirloom vegetables, ensuring that our ingredients are of the highest quality and nutritive value.

Our pastas and sauces are crafted using a signature blend of heritage 00 flour, local wheat, and eggs from our own heritage breed hens, resulting in products that are not only healthier and more flavorful, but also support small regenerative farmers. We are committed to transparency in all aspects of our farm and kitchen, and we take pride in sourcing other ingredients from small farmers and producers in northern Vermont.
