Volo Chocolate

Volo Chocolate is a brand that originated from the passion and love for Mexican chocolate flavors. As former Executive Chefs at a beach resort in Baja California, Mexico, we devoted hours to experimenting with techniques and ingredients to bring out the rich flavors of Mexican chocolate. Inspired by the results, we embarked on a journey to create our own bean to bar craft chocolate recipe.

Now based in Sonoma County, we produce over 1,200 chocolate bars per week in our production studio in Windsor. We prioritize local ingredients, such as Clover Dairy and Petaluma Hill Dairy, while also sourcing cocoa beans from farmers' associations in Guatemala and Haiti. Our careful sourcing ensures the unique and authentic flavors of our chocolates.

From the sourcing of premium organic cocoa beans to the precise roasting process, our chocolate making involves meticulous steps. We refine and conch the cocoa to achieve a creamy and non-gritty texture, while tempering crystalizes the chocolate for a shiny and satisfying snap. Each bar is then molded, wrapped in fully compostable cellulose film, and packaged with beautiful labels featuring stunning quilted artwork by renowned textile artist Cathy Shanahan.
