They believe that flavor is built in the brewing process, using locally malted barley, ale yeast, and a slow, low temperature fermentation. Distilling twice in custom low-reflux pot stills, they transform their flavorful ale into whiskey without compromising on flavor. Perfecting the aging process in heavily toasted and lightly charred American Oak barrels, they strive to enhance their whiskey's flavor.
