Wild Game Chef, led by chef Rick Matney, helps hunters and home cooks make the most of wild game and foraged ingredients. Its approach follows the journey from harvest to table, emphasizing careful handling to preserve the quality and flavor of game meat. Through butchering, processing, and cooking classes, Wild Game Chef teaches participants to work with their own harvest and explore uses for more than just ground meat. The instruction encourages cooks to incorporate different parts of an animal into a wider range of meals, while treating the harvest with care and respect.
The site also features recipes for ingredients including venison, elk, goose, duck, seafood, and wild mushrooms, with options ranging from easy dishes to more involved preparations. Wild Game Chef aims to broaden perceptions of wild game and help families feel more connected to where their food comes from. The site notes the nutritional qualities of game meat, including its protein, iron, and zinc content. Matney is also a recipe contributor to MeatEater.
