Aubergine is an award-winning restaurant located within L’Auberge Carmel, a Relais & Châteaux property in Carmel-by-the-Sea, California. Led by Executive Chef-Director Justin Cogley, the restaurant offers ingredient-driven cuisine that celebrates the Central Coast and the changing seasons. Its tasting menu combines carefully selected regional ingredients with skillful technique, varied textures, and inventive flavors, followed by thoughtfully prepared desserts. The menu is served Wednesday through Sunday and changes with the season.
Aubergine’s wine program features an extensive cellar of approximately 3,700 bottles, bringing together celebrated and lesser-known selections from around the world, with particular strengths in Champagne, Burgundy, the Rhône, Germany, and California. Guests can also choose course-by-course wine pairings. The restaurant has earned two Michelin stars, receiving its second in 2024 after its first in 2019, and holds a Forbes Five-Star distinction.
